Low Fat Mushy Pea Curry

I know it sounds horrendous, but trust me… this mushy pea curry is superb and very easy to make. It actually tastes just like chippers curry LOL…

 

Here is the recipe:

 

Serves: 6

Preparation time: 15 minutes

Cooking time: 30 minutes (approx.)

 

Ingredients

1 medium size onion chopped

3 garlic cloves crushed

12 sliced button mushrooms sliced

2 cans of mushy peas

1 can of chopped tomatoes

1 can of baked beans

2 tbsp of curry powder

1/2 to 1 tsp of chili powder depending on how hot you like it!

1 tbsp ground cumin

 

Method

  1. Fry onion and garlic in fry light, then add mushrooms

  2. When cooked add the rest of the ingredients

  3. Mix it all together well and let it simmer for around 30 minutes

  4. Take off the heat, cool slightly then pour into a food processor or liquidiser and whizz to make a creamy paste.

 

I usually use half of it on the same day I make it and put the rest of it in a plastic container and into the freezer for future use.

You can add king prawns or cubed chicken breast. You can also add your favourite vegetables if you are a vegetarian or vegan.

Serve with basmati rice, low fat oven chips or jacket potato.
